Give this vegetable a chance!
I know I didn’t before. Then I was inspired by a fellow dietitian (thank you Elisa!) and I’ll be in love forever. My secret ingredient is lemon juice; it took care of Brussels sprouts bitterness.
Here’s what I did. It’s a very easy side dish recipe–a change from good ol’ broccoli.
- 1 lb fresh Brussels sprouts
- 1 tbsp extra version olive oil
- Salt and pepper to taste
- Lemon juice (amount as desired)
Heat the oil in a saute pan or sauce pot. Add the Brussels sprouts and saute for 2 minutes. Season with salt and pepper, cover, and allow to cook for 10 minutes. Check half way and add more oil or water so they don’t burn. Drizzle lemon juice right before serving.
