Two Dinners in One: Grilled Mahi Mahi and Fish Tacos–Day 1

As much as I like to cook, I don’t like to do it every day. I want to have nights where I don’t need to wash pots or get all my counter tops dirty. There are nights where I just want heat my food up for 3 minutes in the microwave and enjoy a healthy homemade meal. That’s why I always cook enough to serve 4-6 people (my husband, son, and I), and whatever is left from the second night goes to the freezer.

I know some people just don’t like eating the same meal two nights in a row. If this is you, you might like these ‘two dinners in one’ recipes. The first night is grilled mahi mahi, served with grilled corn and grilled zucchini. The second night is fish tacos that use the fish and corn–and possibly the zucchini if you have extra left over.

Dinner 1:

Grilled Mahi Mahi

  • 2 lbs mahi mahi, (4 fillets, choose them not too thick)
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp cumin powder
  • 1/8 cup (2 tbs) olive oil
  • Juice of one lemon

Mix the garlic, pepper, salt, cumin, and olive oil. Marinade the fish in this mixture for up to 24 hours.

Heat the grill. Place the fish fillets skin down on the grill and cook for 7 minutes. Flip, then cook for another 4 minutes. Check the fish, it must flake. Your cooking time depends on the thickness of the fillets.

When done, remove from the heat, and squeeze some fresh lemon juice right before eating.

Grilled Corn

  • 4 corn on the cob (you will need to save one for dinner 2)
  • Olive oil

Soak the corn in salt water (not too much salt!) for 20 minutes. Drain the water. Lightly coat the corn with olive oil. Grill on medium heat for 20 minutes, rotating them every few minutes.

Grilled zucchini

  • 3-4 green zucchinis
  • Salt
  • Pepper
  • Garlic powder
  • Olive oil

Slice the zucchinis lengthwise, about 1/4th inch thickness. Season with the spices and olive oil. Place on the grill on high heat for 5 minutes. Flip and cook for another 4 minutes.

Fun note about us:

We know the fall is officially here and some people may have said good bye to their grills for this year. We didn’t! As long as it’s not pouring rain outside, we have no problem firing it up! If you prefer to cook indoors, you can use your oven and broil the food instead.

Making fish tacos from the leftovers. You will need more ingredients for the toppings (fresh salsa, chipotle aioli sauce, lettuce, and avocado) and obviously the tortilla bread, but most of the ‘cooking’ is already done!
