Cauliflower Crust Pizza

To be honest, I hate to shame anyone for eating pizza. But let’s face it, a traditional pizza with a regular or deep crust is not the most nutritious and health-friendly meal.

Cauliflower Crust Spinach Pizza Recipe

In this recipe, I went with cheese, tomato, and spinach for toppings. You can make your own pizza sauce or dd your own favorite toppings. Keep the toppings lighter in weight, at least until you get used to this crust, so that it doesn’t fall apart and crumble.

Ingredients
  • 1 cauliflower
  • 2 eggs
  • ⅓ cup Greek yogurt
  • 2 teaspoons dried oregano, divided
  • 3 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1⁄4 teaspoon sea salt
  • 1⁄4 teaspoon garlic powder
  • 1 tablespoon extra virgin olive oil
  • 1 cup shredded mozzarella cheese
  • 1½ cups baby spinach
  • 1⁄2 cup shredded Parmesan cheese
Instructions
  1. Pre-heat oven to 400 F.
  2. Break cauliflower head apart and wash. Dry thoroughly with a paper towel.
  3. Place cauliflower in a food processor and process in batches until it looks like flour.
  4. Transfer cauliflower flour to a bowl. Add eggs, yogurt, and 1 teaspoon dried oregano. Combine well.
  5. Place a parchment paper on a baking sheet. Spread the cauliflower dough on the parchment paper until it's about 1⁄4 inch thick. Make sure it’s all tight and smooth.
  6. Bake cauliflower crust for 40 minutes.
  7. Meanwhile, combine tomato paste, remaining dried oregano, dried basil, sea salt, garlic powder, and extra virgin olive oil in a small bowl.
  8. When the crust is done baking, cover with the tomato sauce. Add half the amount of mozzarella cheese, then the baby spinach, followed by the remaining mozzarella cheese. Top with Parmesan cheese.
  9. Bake for another 5-10 minutes, until the cheese melts.

How does the taste of cauliflower crust pizza compare to regular pizza?

It’s different. You will know that this is not your typical wheat or grain-based pizza. But that’s ok because you want to eventually develop a taste for the foods that are good for your body. My family still enjoyed it despite it being different and not what they had anticipated when I said pizza for dinner!
